1 1/2 lbs cooked frozen SHRIMP
1 head BROCCOLI or 3/4 bag frozen
1 red bell pepper, sliced
2 tbsp. white wine
1 tsp. lemon juice
1 clove garlic, chopped
8 oz. chicken stock (Kitchen Basics)
SHRIMP BROCCOLI STIR FRY
4 green onions chopped, or 1 shallot
chopped, or 1/2 onion chopped (I
sometimes combine a mixture)
red pepper,white pepper,black pepper
2 tbsp. cornstarch
1 tbsp. vegetable oil
Thaw shrimp in strainer. Remove shells. Cook broccoli, set aside.
Heat oil in wok or fry pan and sauté red bell pepper and onions, adding garlic when
almost cooked through.
Stir in white wine, lemon juice and chicken stock. Sprinkle with red, black and
white pepper to taste.
Stir cornstarch in small amount of water to make paste, slowly add to pan. (Add
extra water depending on how thick you want the sauce).
Add broccoli and shrimp, simmer stirring occasionally, heat through.
* Serve over gluten-free spaghetti or rice. Total cooking time is less than 30 minutes.
Can also make with a cauliflower broccoli mix.
